Weeknights can be a busy time for everyone. Fajitas are my go-to when enjoying a meal at a Mexican restaurant. Full of bright vegetables and lean chicken served sizzling on a hot pan, fajitas are such a treat! This recipe brings that same feeling home. Simply chop your veggies, trim your chicken, and toss with olive oil and a medley of spices before dumping it on a sheet pan. Into the oven it goes! Within 30 minutes, dinner is served.
